Inspired by the fresh ingredients found in Mediterranean cuisine, these bowls combine the perfect balance of savory, sweet, and tangy components.

In the mood for a simple lunch or a dinner that satisfies on every level? This recipe is versatile, easy to customize, and full of nutritious ingredients. Let’s dive into how to create your perfect Mediterranean Bowl!

Ingredients & Measurements:

Hot Honey Harissa Chicken   

  • 2 pounds chicken breast
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ cup harissa
  • 5 cloves garlic, finely minced or grated
  • 1/2 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • ¼ cup honey

Rice

  • 2 cups vegetable or chicken stock
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 cup brown jasmine rice, thoroughly rinsed – or basmati rice
  • ½ teaspoon ground black pepper
  • 1 tablespoon parsley, chopped (optional)

Toppings

  • 6 cups washed salad greens 
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup pickled red onions
  • 1 cup hummus
  • ½ cup crumbled feta cheese
  • 1 cup Kalamata olives
  • 1 cup Tzatziki
  • 1 cup corn, grilled or canned (and drained)
  • Pita bread chips, optional

To Prepare The Chicken:

  • Pat dry chicken breast with paper towels and season them with salt and pepper on both sides. Set aside.
  • In a large bowl, combine the harissa sauce, garlic, lemon zest, lemon juice, and honey. Stir until fully mixed. 
  • After fully mixing, toss chicken breasts in your mixture until evenly coated.
  • Cover and refrigerate for at least 30 minutes.
  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Arrange the coated chicken breasts evenly on your baking sheet. Brush any leftover sauce over the chicken.
  • Bake for 13-15 minutes (or until the internal temperature of a chicken breast is 165 degrees). 
  • When complete, cover your cooked chicken with foil and rest for 10 minutes. After cooling, cut the chicken into bite-sized cubes and set aside.

To Cook The Rice: 

  • Place stock, olive oil, and salt in a medium-sized saucepan over high heat. Cover and bring it to a boil.
  • Add the rice and bring it to a boil. As soon as it reaches a boil, put the lid on and turn the heat down to low. Let the rice simmer until liquid is fully absorbed. 
  • After your rice is cooked, turn the heat off and let it rest for 10 minutes with the lid on.
  • When ready to serve, uncover and fluff rice with a fork. Season with black pepper and garnish with chopped parsley if desired. 

Assembling Your Mediterranean Bowls: 

  • Divide cooked rice among 6 bowls, followed by a handful of spring mix, chicken, and preferred toppings. 
  • Top each bowl with a dollop of tzatziki, hummus, and crumbled feta. Add tomatoes, cucumbers, pickled red onions, olives, and corn.
  • Serve your bowls with pita bread or pita chips on the side and enjoy!
